  • 115g strawberries, coarsely chopped
  • 1 TBSP sugar
  • 1 TBSP sugar
  • 1½ tsp instant starch


  • Toss strawberries with 1 tablespoon sugar. Let set 10 minutes.
  • Wisk 1 tablespoon sugar with the starch. Fold quickly into strawberries as it firms up fast.
  • Chill for several hours before using for maximum setting.Fills about 15 mini tartlets

Punky’s Tips

  • Instant starch is just that, instant. There is no cooking needed to thicken the sauce so the bright flavor of the strawberries comes through. Can be used with other soft fruits as well.
  • To use as a filling, keep on the thick side. For a sauce, thin with a little water.
